Kansas City-style barbecue means we rub the brisket with spices and slowly smoke our meat similar to the style that originated in the early 1900s in Kansas City, Missouri. At Burnt Ends KC we use a technique of two different dry rub blends applied hours apart to achieve our proprietary flavor. The brisket is then slow smoked over cherry wood, which sets us apart with an exceptional essence. In keeping with Kansas City style, our signature sauce is tomato-based with sweet and spicy flavors for tangy perfection.
Burnt ends are savory pieces of meat cut from the point of a smoked beef brisket. They are a popular and traditional part of Kansas City barbeque and considered a delicacy. Due to the higher fat content of the brisket point, it takes longer to cook and render to juicy perfection. Our Kansas City style burnt ends are cubed and lightly sauced for a delicious melt-in-your-mouth experience.
